Ingredients

  • 1 pound chicken livers trimmed of connective tissue
  • ½ cup milk optional, for soaking
  • 1 tablespoon olive oil or olive oil spray
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper optional
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons all-purpose flour optional, for extra crispiness

Equipment

  • Air Fryer
  • Paper Towels
  • Cutting Board

Method

  • If using, soak chicken livers in milk for 5 minutes to reduce any metallic taste. Drain well.
  • Pat chicken livers completely dry with paper towels. Trim any remaining connective tissue or green spots.
  • In a bowl, combine garlic powder, paprika, onion powder, thyme, cayenne (if using), salt, and pepper. If using flour for extra crispiness, add it to this mixture.
  • Lightly brush or spray the chicken livers with olive oil, then coat with the seasoning mixture.
  • Preheat your air fryer to 380°F (190°C) for 3 minutes.
  • Lightly spray the air fryer basket with oil. Arrange the seasoned chicken livers in a single layer, leaving space between each piece. Work in batches if needed.
  • Cook for 4-5 minutes, then flip the livers and cook for another 4-5 minutes until crispy outside and still slightly pink inside (internal temperature of 160°F).
  • Let rest for 1-2 minutes before serving to allow juices to redistribute.

Notes

For best results, don't overcrowd your air fryer basket. Chicken livers are best served immediately while still crispy. If you prefer them fully cooked through with no pink, add 1-2 minutes to the cooking time, but be careful not to overcook as they can become tough. For a flavor variation, try adding 1/2 teaspoon of smoked paprika or a pinch of brown sugar to the seasoning mix.
